Two lectures. One two-hour laboratory.
Planning, procuring, storing, producing, and serving foods for families and commercial production. Emphasis is placed on nutritional needs, culture, socioeconomic levels, safety, sanitation, and management. Prerequisite(s): FCS 170 /KNES 170   (Cross-listed with FCS 572.)
